And here’s a bonus! This is the recipe for Carbon Fork’s Creamy Risotto:
5.5 Cups Vegetable Stock
1/8 Cup Olive Oil
1/4 Finely Diced Onion
2 Cups Half Cooked Arborio Rice
1 tsp Salt
1 tsp Pepper
1.5 oz White Wine
- Bring stock to simmer
- In large skillet heat oil and sauté onions until soft
- Add rice, salt and pepper, and sauté for 2 minutes.
- Deglaze with wine and add vegetable stock 1 cup at a time while continually stirring with wooden spoon.
- Continue to add stock until rice is al dente.
